Frozen Waldorf Salad Recipe
Recipe Ingredients
2 eggs
1/2 c. sugar
1/2 c. pineapple juice
2 apples, chopped (1 c.)
1/2 c. chopped celery
1/2 c. crushed pineapple
1 c. Cool Whip
1/2 c. chopped nuts
1/4 c. lemon juice
1/8 tsp. salt
Cooking Directions
Beat eggs slightly. Add sugar, salt and juice. Cook in double boiler until thick, then let cool. Fold in fruit and Cool Whip. Pour in tray and freeze. Should be removed from freezer 30 minutes prior to serving. Can be used as salad or dessert. If dessert add a scoop of whipped cream, cherry or strawberry on top.
