California Ambrosia Salad Recipe
Recipe Ingredients
1 head of iceberg lettuce3 lg. onions
2 lg. bananas
1/2 c. pitted dates or raisins or pineapple chunks
Cooking Directions
Core, rinse and thoroughly drain lettuce; refrigerate in plastic bag or crisper. Pare and section oranges. Shortly before serving, cut lettuce heat crosswise into inch-thick slice, then cut each slice lengthwise and crosswise into bite size chunks.Peel and slice bananas. Slice or halve dates. Combine lettuce chunks and half the fruit in a large chilled serving bowl. Arrange remaining fruit on top. When ready to serve toss with Ambrosia Dressing.
Makes 6 to 8 servings.
AMBROSIA DRESSING:
Stir together:
1/4 c. lemon juice
3 tbsp. brown sugar (packed)
1/2 tsp. salt
1/4 tsp. powdered ginger
1 c. dairy sour cream
1/4 c. flaked coconut
until sugar is dissolved. Gradually blend in sour cream; stir in coconut. Makes about 1 1/2 cups dressing.
