Arroz Con Pollo Recipe


Recipe Ingredients

1 lb. deboned chicken breasts
1 pkg. wild and long grain rice mix
1 can chicken broth
Italian salad dressing
Rose or light white wine
butter
Lemon juice
Tarragon
Thyme
Basil
1/4 c. mushroom slices or pieces



Cooking Directions

Season chicken to taste with salad dressing, wine, butter, lemon juice, tarragon, thyme and basil. Allow chicken to marinate approximately 1 hour. Bake chicken at 325 degrees for 2 hours, adding more liquid if necessary. Prepare rice according to package directions, substituting chicken broth for water. When rice is cooked, add to cut up cooked chicken and mushrooms in a skillet. Heat together for 15 minutes, adding chicken pan drippings and/or wine if necessary.
