Swedish Meatballs For A Crowd Recipe

This recipe makes 100 meatballs or 40/50 servings, marvelous for "make ahead and freeze". 3 lbs. ground pork 2 lbs. ground veal 3/4 c. chopped onion 1 qt. bread crumbs 2 qts. mushroom sauce 5 eggs 3 tbsp. salt (opt.) 1 tsp. pepper 2 c. milk 1 1/3 c. grated carrots
Have meats ground together. Mix all ingredients except sauce and shape into small 1 inch balls. Fry in small amount of oil until brown and place in large pan (roaster, etc.). Pour mushroom sauce over all and bake 1 hour at 325 degrees.
We used to have a large family and I made this for years, for all kinds of parties. Everyone loved the meatballs either as an entree or hors d'oeuvres.
