Exchange: Free food (calories negligible). 2 tbsp. cornstarch or arrowroot 1/2 c. minced green onion tops (optional) 1/2 c. chopped fresh mushrooms (optional) 2 tbsp. minced parsley (optional)
Heat the defatted drippings in a saucepan. As soon as they become liquid, put a little of the liquid in a cup and add the cornstarch or arrowroot. Pour the mixture back into the gravy. Add one or all of the optional ingredients, if desired. Simmer until it thickens slightly.
To prepare defatted meat drippings: After cooking your meat, removing the meat from the roasting pan and pour the drippings into a bowl. Put the bowl in the refrigerator until the drippings are cold and all of the fat has solidified on the top. Remove the fat and you have defatted drippings.
