Skinny Gravy Recipe
Recipe Ingredients
2 c. defatted turkey drippings2 tbsp. cornstarch
1/2 c. green onions, minced
1/2 c. fresh mushrooms, chopped
2 tbsp. parsley, minced
Cooking Directions
After cooking turkey, pour drippings from roast into bowl. Put bowl in refrigerator until drippings are cold and all fat is solidified on top. Remove the fat and you have defatted drippings. (Drippings can be put in the freezer if you are in a hurry.) Heat defatted drippings in a saucepan. As soon as they become liquid, put a little of the liquid in a cup, add cornstarch and mix. Pour back into defatted drippings. Add other ingredients. Simmer until gravy thickens slightly. (3 tablespoons = 5 calories.)DIABETICS: "Free" acceptable for low cholesterol and salt restrictive diets.
