Seafood Casserole Recipe
Recipe Ingredients
2-4 tbsp. butter
1/2 lg. onion, chopped fine
1 c. milk
1 c. half & half
1 tsp. salt
1/8 tsp. paprika
2 tbsp. cooking sherry
1 c. cooked seafood
1 c. raw scallops
Cooking Directions
Simmer onions until very tender but not browned in butter. Add raw scallops. Simmer in covered pan until cooked, about 15 minutes. Remove onions and scallops. Thicken liquid with flour. Add milk, half & half, salt and sherry. Return scallops and onions. Add other seafood (lobster, crabmeat, shrimp, etc.) Heat all. Sprinkle with paprika. Serve over noodles or rice.
