Meatless Tamale Pie Recipe


Recipe Ingredients

1 lg. onion, finely chopped
1/2 green pepper, finely chopped
1/2 c. olive oil
1 c. yellow cornmeal
2 c. milk
3 eggs, slightly beaten
1/2 tbsp. salt
2 c. ripe olives
1/2 c. grated cheese
1 can (1 lb.) kernel corn
1/2 tsp. pepper
1 can #2 1/2 tomatoes (1 lb. 12 oz., 3 1/2 cups)
1 tbsp. Spanish pepper, smoothed with 1 tbsp. water



Cooking Directions

Saute onion and pepper in oil until onion is golden; add tomatoes and simmer 20 minutes. Meanwhile, cook cornmeal in milk, according to mush directions. Beat eggs in large bowl; add mush, corn and seasonings.
Combine tomato and cornmeal mixtures and blend well. Stir in olives. Turn into greased casserole and top with grated cheese. Bake at 350 degrees for 1 hour or until firm.
