Yams & Cranberry Casserole Recipe
Recipe Ingredients
1 can (40 oz.) yams, drained
1 pkg. (12 oz.) cranberries, whole, fresh, 3 c.
1 1/4 to 1 1/2 c. sugar
1 sm. orange, sliced
1/2 c. pecan halves
1/4 c. orange juice or brandy
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. mace
Cooking Directions
Combine cranberries, sugar, orange slices, pecan halves, orange juice and spices in 2 quart casserole. Bake uncovered at 375 degrees for 30 minutes. Stir yams into and bake until hot (15 minutes). Serves 8.
