Scalloped Apples, Pork Chops & Sweet Potatoes Recipe


Recipe Ingredients

3 apples, peeled, cored & sliced thick
1 lg. can sweet potatoes, drained (or 4 fresh cooked)
1/3 c. raisins
1/3 c. firmly packed light brown sugar
1/4 tsp. ground nutmeg
3 tbsp. jelly mixed with 3 tbsp. prepared mustard
4 thick pork chops
1/4 tsp. salt
1/4 tsp. pepper



Cooking Directions

Place apples around outside of shallow baking dish. Place sweet potatoes (sliced thick) in center. Sprinkle with raisins then with brown sugar and nutmeg. Place chops on top. Spread jelly mustard mixture on chops. Sprinkle with salt and pepper. Bake in preheated oven, uncovered, at 350 degrees for 1 1/2 hours or 325 degrees for 1 3/4 hours.
