Pumpkin Cake With Cream Cheese Icing Recipe
Recipe Ingredients
4 whole eggs1 c. salad oil
2 tsp. baking soda
1/2 tsp. salt
2 c. sugar
2 c. all-purpose flour
2 tsp. cinnamon
2 c. pumpkin
Cooking Directions
Beat the eggs together with the sugar until light and well blended. Add salad oil, continuing to beat. Sift dry ingredients together and thoroughly mix into the egg mixture. Add pumpkin and blend well again. Pour into well greased and floured 9 inch tube cake pan. Bake at 350 degrees for 55 minutes. Let stand in pan for 10 minutes before turning over on rack to cool. When cool, frost with the following icing.ICING:
1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
1 (1 lb.) box confectioners' sugar
1 tsp. vanilla
1 c. broken pecans
Mix all ingredients together and beat until ready to spread.
