Kathy's Fried Rice Recipe
Recipe Ingredients
4 c. brown or white rice
1 lg. onion, diced
2 c. celery, diced
4 to 5 carrots, sliced thinly
1 can water chestnuts
1 pkg. bean sprouts
Soy sauce to taste
Meat of your choice (chicken, pork, turkey, or beef or make without meat)
Cooking Directions
Prepare rice as described on package (4 cups cooked). If time permits, refrigerate cooked rice overnight. In wok or large fry pan, saute celery, onions, and other vegetables and meat, 1/2 a cup at a time, for 3 minutes; each time removing from pan into another container. After all the ingredients have been stir fried in oil, stir fry rice and add 1/2 cup soy sauce. Add all the vegetables and meat to rice and stir together. Add 1 to 2 raw eggs and stir in and let mixture simmer, covered, for about 15 minutes. Serve hot and enjoy. 3 to 4 servings.
