Great Grandma's Christmas Cake Cookies Recipe
Recipe Ingredients
2 lbs. dates, pitted and cut in pieces
1/2 lb. candied cherries, quartered
1/2 lb. candied pineapple, thin slices
1 lb. chopped, shelled nuts, walnuts or pecans
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. butter
1 1/2 c. sugar
2 eggs
Cooking Directions
Work butter until soft and creamy. Add sugar gradually. Mix well. Beat in eggs. Stir in dry ingredients and fruit and nuts. Drop by teaspoon onto ungreased cookie sheet. Bake 10 minutes at 400 degrees. Do not over bake. Cool slightly and remove from cookie sheet. Makes 120 to 150 cookies. They keep very well. This is an old family recipe which my great grandmother has made for over 40 years.
