Albuquerque Scramble Recipe
Recipe Ingredients
1/2 c. chopped onion
1 clove chopped garlic
1 1/2 c. cubed, boiled potatoes
3 to 4 tbsp. bacon drippings or oil
1 sm. can chopped Ortega chili
6 lg. eggs, scrambled with 1 tbsp. water, salt, and pepper
Cooking Directions
Heat drippings; add potatoes and saute until golden brown. Add onions and garlic and continue to cook until onion is limp. Pour eggs and chili over potatoes and stir to desired doneness. Serves 3 or 4.
