Chicken Dijon In Pastry Recipe
Recipe Ingredients
4 chicken breasts, boned and divided
1/4 c. butter
4 tbsp. minced onion
3 tbsp. minced shallots
1/3 lb. sliced mushrooms
1 tbsp. flour
1 1/2 c. whipping cream
1/2 c. cooking sherry
3 tbsp. Dijon mustard
1/2 tsp. tarragon
1/4 tsp. salt
1/4 tsp. pepper
3/4 pack Phyllo leaves
1/3 c. melted butter
1/2 c. toasted wheat germ
Cooking Directions
Saute chicken in butter until tender. Remove. Saute onion, shallots and mushrooms. Blend in flour and cook 3 minutes. Slowly whisk in cream and stir until thick. Add sherry, mustard, tarragon, salt and pepper. Add chicken and cool completely. Brush 2 folded sheets of Phyllo dough individually with butter. Then sprinkle with wheat germ and layer sheets. Fill with chicken mixture and roll up. Repeat to make a total of 8. Bake on cookie sheet for 15 minutes at 400 degrees.
