Southwest Arroz Con Pollo Recipe


Recipe Ingredients

1 tsp. vegetable oil
1 chicken (3-3 1/2 lb.), cut up
1 c. chopped onion
1 tsp. minced garlic
2 tsp. cumin
1 c. long grain rice
1 can (13 3/4 or 14 1/2 oz.) chicken broth plus enough liquid to equal 2 c. water
1/3 c. chopped fresh cilantro
Lime wedges, for garnish



Cooking Directions

Heat oil in large skillet or Dutch oven over medium high heat. Pat chicken dry. Add half the chicken to skillet until brown, 5 minutes per side. Repeat with remaining chicken. Remove from skillet. Add onions to skillet and let cook, stirring, until browned. Add garlic, cumin and rice; cook, stirring, 1 minute. Stir in broth and water, green chilies, salt and pepper. Bring to boil.
