Christmas Cookies Recipe
Recipe Ingredients
1 stick unsalted butter, softened
1 c. sugar
1 lg. egg, beaten lightly
1 tsp. vanilla
1 1/4 c. unbleached flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. chopped pecans
1 c. semi-sweet chocolate chips
1 c. sweetened grated coconut
1 c. minced mixed glazeed fruits
Chopped dates or candied ginger (minced) (opt.)
Cooking Directions
In a bowl cream the butter, beat in the sugar, a little at a time and beat the mixture until it is light and fluffy. Stir in the egg, the vanilla, the flour, sifted together with the baking soda and the salt, the nuts, the chocolate chips, the coconut and the fruits and drop by teaspoons 2" apart onto buttered baking sheets. Bake the cookies in a preheated oven at 350 degrees for 15 minutes, or until they are golden. Transfer them to racks to cool. Makes about 64 cookies.
