Mother's Ambrosia Cake Recipe


Recipe Ingredients

2 1/2 c. cake flour
3 tsp. baking powder
1 tsp. salt
1 1/4 c. sugar



Cooking Directions

In bowl:
2/3 c. shortening
Measure in cup:
1 c. milk
1 1/2 tsp. vanilla
Have ready:
5 egg whites
1/2 c. sugar
Beat egg whites, add sugar gradually, only until holds up soft peaks. Stir shortening until soft, add milk and dry ingredients. Add beaten egg whites, only mix and heat one minute. bake at 350 degrees.
FILLING:
Heat 1 cup orange juice, 1/3 c. sugar until sugar is dissolved. Blend constantly. Remove from heat, add 1/3 cup sugar, dash of salt, 1 teaspoon butter, 1 teaspoon lemon juice and 1/4 teaspoon grated orange rind. Put between cake layer.
FROSTING:
2 egg whites
3/4 c. sugar
1/4 tsp. cream of tartar
Dash of salt
1/3 c. light Karo
2 tbsp. water
1 tsp. vanilla
Mix all ingredients except vanilla in double boiler. Heat until mixture holds a good peak about seven minutes. Remove from heat, add vanilla. After frosting cake, you may sprinkle with fresh coconut.
