John Herrin's Coconut Cake Recipe


Recipe Ingredients

1 c. (2 sticks) butter
2 c. sugar
3 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1/2 c. buttermilk
1/2 c. water
4 eggs
FILLING:
1 lg. coconut, grated (reserve milk)
2 c. sugar
2 tbsp. cornstarch
1 c. coconut milk (supplement with sweet milk, if necessary)



Cooking Directions

CAKE: Cream butter and sugar. Add eggs, one at a time, beating after each addition. Add dry ingredients, alternately with the buttermilk and water. Add vanilla and mix well. Pour into 3 round or square cake pans that have been greased and floured. Bake at 375 degrees for about 25 minutes. Place in the middle oven rack until tests done.
FILLING: Mix all ingredients in order given and place over heat and cook until thick, stirring constantly. (Mixture should be about the consistency of mayonnaise or thick gravy.) Cool slightly and spread between layers with grated coconut and on sides of cake.
