Divinity Frosting (for Ambrosia Cake) Recipe
Recipe Ingredients
1 1/2 c. sugar1/2 tsp. cream of tartar
1/2 c. water
3 egg whites
1/2 tsp. vanilla extract
Cooking Directions
Combine first 3 ingredients in a heavy saucepan. Cook over medium heat, stirring constantly, until mixture is clear. Cook mixture without stirring until candy thermometer registers 240 degrees.Beat whites of 3 eggs, at room temperature, until soft peaks form; continue to beat, slowly adding syrup mixture. Add vanilla; continue beating until stiff peaks form and frosting is thick enough to spread. Yield: enough Divinity Frosting for 1 (3 layer) cake.
