Hot Seafood Croissants Recipe


Recipe Ingredients

4 lg. croissants
4 slices fresh tomato
1 pkg. (6 oz.) crabmeat, thawed
1 c. shredded Swiss cheese
1/4 c. mayonnaise
1 tsp. lemon juice
Dash of hot pepper sauce
Crisp lettuce leaves



Cooking Directions

1. Split croissants and place onto heatproof tray or baking sheet, open.
2. Toast lightly about 10 inches from broiler heat.
3. Top lower half of each croissant with a slice of tomato.
4. Combine crabmeat, cheese, mayonnaise, lemon juice and pepper sauce.
5. Top each tomato slice with 1/4 of the crab mixture.
6. Broil about 6 inches from heat for 2 to 3 minutes until top of filling is bubbly.
7. Top with half of the croissant. Serve with lettuce leaves.
8. Spread sandwich, if desired, with a decorative toothpick to hold it together while serving.
Good served with: Creamy vegetable soup or a fruit and vegetable salad for lunch. Recipe may be halved or doubled.
TIPS: You may wish to use the new imitation crabmeat in the filling.
HEALTH NOTE: To reduce fat and calories, use light mayonnaise and halve the amount of Swiss cheese.
