Always - Ready Bran Muffins Recipe
Recipe Ingredients
1/2 c. 100% corn oil butter1 c. brown sugar
2 eggs
2 1/2 c. unbleached white flour
2 1/2 tsp. baking soda
1 tsp. salt
1 pt. buttermilk
Cooking Directions
Combine 1 cup of bran with 1 cup boiling water, stir once and let steep. Cream the butter and sugar in a mixing bowl. Beat the eggs slightly or measure the egg substitute. Combine the flour, soda and salt.Combine the steeped bran, the unsteeped bran, the eggs or egg substitute, flour mixture and buttermilk with the butter and sugar and stir until thoroughly mixed. Pour into a plastic container. Cover tightly and let stand a minimum of 12 hours before baking muffins. The batter will keep in the refrigerator for 6 weeks.
