Always - Ready Bran Muffins Recipe


Recipe Ingredients

1/2 c. 100% corn oil butter
1 c. brown sugar
2 eggs
2 1/2 c. unbleached white flour
2 1/2 tsp. baking soda
1 tsp. salt
1 pt. buttermilk



Cooking Directions

Combine 1 cup of bran with 1 cup boiling water, stir once and let steep. Cream the butter and sugar in a mixing bowl. Beat the eggs slightly or measure the egg substitute. Combine the flour, soda and salt.
Combine the steeped bran, the unsteeped bran, the eggs or egg substitute, flour mixture and buttermilk with the butter and sugar and stir until thoroughly mixed. Pour into a plastic container. Cover tightly and let stand a minimum of 12 hours before baking muffins. The batter will keep in the refrigerator for 6 weeks.

vicki vance (24/03/11 7:39 am)this recipe does not include the bran in the ingredients. I have a recipe almost identical to this one. It calls for a total of 3 cups of bran. You steep one cup bran into the boiling water and steep. The other two cups of bran will be added with the flour.

It is a wonderful recipe, and the batter really does keep will in the fridge.
