Peaches In Red Wine Recipe
Recipe Ingredients
2 (29 oz.) cans cling peach halves1 c. sugar
1/2 lemon, thinly sliced
1 (1 inch) piece cinnamon stick
1/2 c. dry red wine
Maraschino cherries
Cooking Directions
Drain peaches and reserve 1/2 cup of syrup. In small saucepan mix together the reserved syrup, sugar, lemon slices and the stick of cinnamon. Bring to a boil over high heat, reduce heat to moderate low and continue boiling about 18 minutes - until it reaches 230 degrees on candy thermometer. Cool for 2 minutes. Stir in wine.Arrange peaches, lemon slices, cherries, and additional cinnamon sticks (if desired) in apothecary jars or other containers. Add wine syrup and cover.
Serve over ice cream or as a relish.
Keeps several weeks in refrigerator.
