Summer Squash And Tomatoes Au Gratin Recipe
Recipe Ingredients
6 med. summer squash or zucchini
5 lg. tomatoes, thinly sliced
1 lb. grated Mozzarella cheese
8 oz. grated Cheddar cheese
1 lb. bacon, fried and crumbled
1 lg. onion, thinly sliced
Garlic powder to taste
Pepper to taste
Salad croutons, lightly crushed
1 stick butter
Cooking Directions
In large casserole, layer thinly sliced squash, pepper, tomato, garlic powder, onion, bacon, and cheeses. In second layer after the squash, dot with 1/2 stick of butter and continue with tomato, etc. End with a layer of tomato. Sprinkle lightly crushed salad croutons on top and dot with remaining butter. Bake at 350 degrees for 1 hour or until squash is tender and cheese is bubbly. This can also be used as a main dish and portions given would feed four as a main course. Corn may also be added and canned tomatoes may be substituted.
