Scalloped Sweet Potatoes Recipe


Recipe Ingredients

6 med. sized sweet potatoes
6 slices pineapple, cut in cubes
1/4 c. butter
1/2 c. brown sugar
3/4 c. pineapple juice



Cooking Directions

Pare and slice raw potatoes in 1/4 inch slices. Arrange alternate layers of sweet potatoes and pineapple in a wide baking dish, so that there are only 4 layers in all. Combine pineapple juice, brown sugar and add butter. Boil for 3 minutes. Pour over sweet potatoes.
