Santa Fe Chicken Recipe


Recipe Ingredients

1 (14 oz.) can stewed tomatoes
1/4 c. mild or hot green chile salsa
3/4 c. onion, chopped
1 garlic clove, minced
1/4 tsp. salt
3 tbsp. flour
2 tbsp. olive oil
2 c. hot, cooked rice
4 boneless chicken breasts
Sour cream
1 sm. avocado, cubed & divided



Cooking Directions

1 small fresh, pitted, peeled, cut into cubes (divided). Fresh cilantro or parsley leaves (divided) for garnish. Cut up can stewed tomatoes.
Combine tomatoes, salsa, onions, garlic and salt. Set aside. Coat chicken with flour. Heat oil in skillet with cover. Saute chicken 3 or 4 minutes each side or until golden brown. Pour sauce over chicken. Cover, simmer 15-20 minutes or until tender. Spoon rice into plates, top with chicken. Add sauce. Garnish with dollop of sour cream, avocado cubes, cilantro or parsley.
