Potato Special From Abingdon Recipe
Recipe Ingredients
3 1/2 lbs. potatoes
1 pt. Half and Half
2/3 lbs. Velveeta cheese
4 oz. pkg. grated Mozzarella cheese
1 stick butter (butter)
Salt and pepper
Cooking Directions
Cook potatoes in jackets. Cool and peel. Grate into a 9 x 13 inch pan about half full. Sprinkle with salt and pepper if desired. Cover pan and refrigerate overnight. Heat the cream, cheeses, and butter over low heat until melted. An hour before cooking, pour cheese mixture to just top of potatoes. Do not mix. Bake uncovered at 350 degrees for 1 hour.
