Lemon Party Meringue Pie Recipe


Recipe Ingredients

1 sm. pkg. lemon Jello pudding and pie filling
2/3 c. sugar
2 1/4 c. water
3 eggs, separated
2 tbsp. lemon juice
2 tbsp. butter
1 baked 9 inch pie shell
6 tbsp. sugar



Cooking Directions

Combine Jello pie filling, 2/3 cup sugar and 1/4 cup of water in saucepan. Blend in egg yolks. Then add remaining 2 cups of water. Cook and stir until mixture comes to a full boil and is thickened, about 5 minutes. Remove from heat. Cool 5 minutes, stirring twice. Add lemon juice and butter; blend well. Pour into baked pie shell. Beat egg whites and add 6 tablespoons sugar to make stiff meringue. Spread on pie filling. Bake at 425 degrees until brown, about 5 minutes. Cool 4 hours before serving.
