Karen's No Fat Shrimp & Cottage Cheese Salad Recipe


Recipe Ingredients

1 small carton fat free or low fat cottage cheese
1 small can of tiny or broken shrimp (rinsed & drained)
1 large rib of celery chopped
1 green onion chopped fine
1 small tomato chopped
(see below for more options)



Cooking Directions

Mix all the above and add salt and pepper to taste.
OPTIONAL - If I have them I also add any of the following: chopped cucumber, zuchinni, red radishes, green and/or red pepper, chopped mushroom or finely chopped cabbage. I don't use carrot because I think it "fights" with the shrimp flavor, but if you love it go right ahead.
I've been making this for 40 years and still love it. Use your imagination and enjoy!
I find a 1/2 cup to 1 cup serving of this for lunch really fills me up and it's healthy too!
