Chicken Tortillas Recipe


Recipe Ingredients

2 c. chicken chunks, cooked
2 to 4 tbsp. chunky salsa
8 oz. cream cheese, diced & brought to room temp.
4 lg. flour tortillas, room temp.
1/3 c. cream or milk
1 c. grated Monterey Jack cheese
Garnishes; sliced ripe olives, avocado, green onion, tomato, lettuce, extra salsa



Cooking Directions

Combine chicken chunks, salsa, cream cheese chunks and salt to taste. Spoon 1/4 of mixture into each tortillas - down the center and roll - leave seam side down in baking dish. Brush tops with cream or milk and pour remaining around tortillas. Sprinkle with grated cheese. Bake uncovered 20 to 25 minutes at 350 degrees until heated through and cheese is bubbly.
HINT: You can cook chicken boneless chicken breasts in microwave for added ease.
ALSO: You can substitute mixture of 1/2 shrimp, 1/2 scallops (poached) and a small can of crab with 1 tablespoon of horseradish and 1/2 cup crisp sweet corn in place of chicken and salsa.
