Cheese Spread Recipe


Recipe Ingredients

1 lb sharp cheddar cheese, grated
1 3 oz. pkg cream cheese
3 tablespoons red pimento paste
1/4 cup dry sherry wine
1/2 cup finely chopped walnuts
2 tablespoons fresh parsley, finely chopped
1 clove garlic, minced
2 tablespoons green onion, finely chopped
1/4 teaspoon each garlic and onion powder
pinch of cayenne pepper



Cooking Directions

Note: Pimento paste is available in the Portuguese or Latino grocery section of your supermarket. If it is not available, substitute roasted red pimentos or Italian roasted red peppers in oil. Process the roasted peppers in a blender or food processor.
The preparation of this spread is easiest when done using a food processor. Chop the herbs and garlic first, adding remaining ingredients (except walnuts). Process until smooth, then add the walnuts and process until only small chunks remain.
