Blueberry Rhubarb Crisp Recipe


Recipe Ingredients

2 c. blueberries, fresh or frozen
1/2 c. light brown sugar
2 tbsp. flour
2 c. fresh rhubarb, washed, dried & cut into 1 inch pieces
8 tbsp. cold unsalted butter, cut into bits
1 c. granulated sugar
3/4 c. flour
1/4 tsp. salt
Vanilla ice cream



Cooking Directions

Preheat oven to 350 degrees. Butter 1 1/2 quart au gratin dish or 8 x 8 baking pan.
In a medium size bowl, combine berries and rhubarb and toss with granulated sugar and 2 tablespoons flour that have been combined. Transfer fruit to baking dish.
Make the topping by combing brown sugar, flour and salt. Blend with a fork or pastry blender until mixture resembles coarse meal. Sprinkle over fruit. Bake 45 minutes and serve warm with vanilla ice cream.
