Baked Alaska Fudge Pie Recipe


Recipe Ingredients

1 pre-baked 9-inch pastry shell, chilled
1/4 c. fudge sundae topping
?? qts. (6 c.) softened vanilla or chocolate ice cream
Additional fudge topping, for garnish
MERINGUE:
3 egg whites
1/8 tsp. cream of tartar
?? c. granulated sugar



Cooking Directions

1. Spread fudge topping on bottom of chilled pastry shell.
2. In a large bowl, beat ice cream with spoon or electric mixer until smooth. Spread evenly over bottom of pie shell. Place in freezer.
3. To prepare meringue, whip egg whites until frothy. Add cream of tartar. Continue beating until almost stiff. Add sugar, 1 tablespoon at a time. Continue beating until stiff and glossy.
4. Spread meringue over ice cream layer in pie shell. Spread completely to edges of shell to seal. Brown at 450 degrees for 3 to 4 minutes until meringue is lightly browned.
5. Drizzle top with additional fudge topping. Serve immediately.
Good served with: Coffee or chocolate or mint flavored liqueur, if desired.
TIPS: Pie may be made ahead, ?????? and frozen for several days. Brown just before serving. Serve flaming, pour 1 to 2 ?????? brandy or rum over and ignite.
