Artichoke Crab Recipe


Recipe Ingredients

4 artichokes
1 tbsp. chopped green onion
1 clove garlic, minced
1/4 c. butter
1/4 c. flour
12 oz. clam juice
7 1/2 oz. crab meat
1/4 c. Romano cheese, grated
1/4 c. white wine
4 slices Jack cheese



Cooking Directions

Clean artichokes by trimming outside leaves and cut off tips. Cook artichokes until tender, make sure bottom is flat so artichoke can sit flat. Remove inner center of leaves and choke carefully when cool. Place in baking pan. In skillet cook green onions, garlic in butter until onion is soft. Blend in flour, add clam juice and stir constantly until mixture thickens. Stir in crab meat, cheese and wine. Spoon mixture into artichokes. Place a piece of Jack cheese on top of each artichoke. Place water in bottom of pan 1/2 inch high, cover with foil and bake at 375 degrees for about 30 minutes.
