3-minute Microwave Rocky Road Fudge Recipe
Recipe Ingredients
1/2 c. butter1 lb. powdered sugar
1/3 c. sifted cocoa powder
1/4 c. evaporated milk
1 tsp. vanilla
1 1/2 c. walnuts or pecans
2 c. miniature marshmallows
Cooking Directions
Place butter in a 2-quart bowl and cook uncovered in microwave oven on high for 1 1/4 minutes or until melted. Stir in sugar, cocoa and milk. Cook on high for 2 minutes or until slightly thinned and warm. Add vanilla and nuts.Let mixture cool by constantly stirring, just until it is cool enough to add marshmallows and turn the mixture into a wax paper lined 8x8x2 inch pan. Chill until firm.
Turn mixture over onto a cutting board, peel off wax paper and cut into pieces. Yield: 2 pounds of fudge.
